Pumpkin Bread Recipe
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Healthy Version
1 whole egg, 1 egg white
2 T organic unsalted cultured butter
1/4 c maple syrup
1 ripe banana, mashed
2 1/4 cup Pamela's Baking Flour *
(gluten-free)
1 t cinnamon
1 t cinnamon
1/2 t ground cloves
1 T fresh grated ginger

Changing just a few simple ingredients can make a relatively unhealthy recipe into a healthy snack.

*Pamela's Baking Flour is a mix of brown rice flour, cultured buttermilk, natural almond meal, tapioca starch, sweet white rice flour, potato starch, baking powder, baking soda, sea salt, and xanthum gum (sweetener).  You can also use a whole wheat flour if you don't have gluten intolerances.
